The ViewHouse is seeking a talented EXTREMELY HIGH VOLUME EXECUTIVE CHEF/KITCHEN MANAGER for its Denver location. Each ViewHouse location promises a vibrant atmosphere, animated staff, indoor & outdoor flat screens & a variety of bar activities, catering to the city's biggest sports fans, backyard game junkies & casual diners alike.Job DescriptionThe Executive Chef/Kitchen Manager ensures that the kitchen provides consistent high quality, safe, eye-appealing, properly priced food. Establishes quality standards, trains and educates kitchen and service employees in cooking methods, presentation techniques, and portion control. Utilizes experience and talent to help the restaurant reach their financial goals through skilled management in the categories of labor, food cost and ordering.Job Duties of a ViewHouse Executive Chef/Kitchen Manager: - Full responsibility for all kitchen operations, Must have extensive high volume experience-- - Product quality control, including presentation-- - Product inventory and ordering-- - Help train and effectively manage kitchen staff in a manner that helps boost morale and provides guidance before discipline-- - Ensure consistency of recipe execution-- - Ensure food safety and sanitation guidelines are enforced and taught when necessary.-- - Maintain cleanliness of all BOH areas and equipment-- - Performs all BOH crew duties as needed including prep and supportive work, butchery and working all line stations and expediting-- - Maintain excellent communication and cooperation with other managers-- - Minimum 5 years kitchen supervisory experience with proven staff leadership-- - Experience with high volume, fast-paced bar or restaurant-- - Desire to grow through demonstrated performance-- - Basic knowledge of food and labor costing-- - Flexible schedule (location is open from 11am - 2am)-- - Ability to multi task, problem solve and work well under pressure-- - Organized & dependable-- - Understanding of safety and sanitation principals-- - Must have a positive attitude, good people skills (with superiors, subordinates and guests) and be a team player.Job Requirements: Customer-Service: Kitchen managers may be required to interact with customers. Being friendly and courteous will help keep customers coming back.Company Representative: Kitchen Managers must maintain a working knowledge of Company products and specifications.Attention to Detail: Kitchen managers must keep their eyes on a lot of elements: food & health standards, costs, safety, etc.Leadership: Kitchen managers must be leaders in the back of house, unifying their team during heavy shifts, resolving conflicts and successfully executing the task at hand.Management Skills: Kitchen managers not only deal with food, they also must deal with costs, pricing, creating work schedules and more.Organizational Skills: Keeping work schedules, shipments, cleaning schedules and more organized is crucial to the job.Problem-Solving Skills: Dealing with employee conflict, irate customers and wrong stock orders is part of a kitchen managers job. Being able to come up with a solution quickly is a needed skill.Communication Skills: Kitchen managers need to accurately and easily communicate standards and cooking methods to staff, give orders and speak with customers clearly.
